Amazing Salsa and Chips


This salsa is amazing!  The fresh tomatoes along with the other fresh veggies really give this salsa a POP! 


To remove the skin off of a fresh tomato, slit the bottom of the tomato 2 times, making an "X".  Drop in boiling hot water for about 30-60 seconds. Remove with slotted spoon and immediately "shock" in ice water.  The skin should come off easily.  If you want thicker salsa, you may choose to remove the seeds and juice from the tomato.  

I would consider this salsa mild to medium.  If you want more heat, just don't discard the seeds of the jalapenos.

This salsa is also great over an Omelet in the morning stuffed with my Three Meat Chili.

Salsa


5 medium to large Fresh tomatoes, skin removed and chopped

½ small Onion, finely chopped

4 Tbsp chopped Cilantro

3 Jalapeño, seeded and finely Chopped

5 large gloves of Garlic, finely minced

½ bell pepper, finely chopped

Juice of 1 lime

3 Tbsp Vinegar

3 Tbsp extra virgin olive oil

½-1 tsp Salt

½ tsp fresh cracked pepper

 

1.      Directions are very complicated: Mix all ingredients well and store in refrigerator.  Enjoy!
