Coconut used to have a bad rap but we have come to learn that coconut oil is the miracle food/supplement! Take it orally, lather it on your dry skin, the possibilities are endless! And of course, baking with coconut oil is delicious! I actually prefer my dairy-free recipe for COCONUT CAKE (similar to the Birthday Cake on blog) using coconut oil in cookbook over the Vanilla Butter Cake using butter. ReplyDeleteLast night was the first time I tried one of your recipes...I made the blondies. OMG...my girlfriend said they were TOO good, LOL...I added some Enjoy Life chocolate chips and used 1/3 cup coconut sugar because I don't use stevia...and I like everything sweet...I may even add MORE coconut sugar or honey next time. I'm always looking for recipes like this because my daughter resists anything Paleo...thank you!! I can't wait to try more!
ReplyDeleteI made your Sandwich Buns and they are delish! I love them pan-toasted with eggs. I also made the peanut butter bread which is also wonderful. Next time I'm going to try almond butter. On my list are the cupcakes and chocolate cream cheese frosting for Easter and the blondies. Thank you!

ReplyDeleteWe have love everything we have tried from your cookbook...the chia hot cereal, the PB bread, the sandwich buns, the chipotle chicken thighs (we have made this many times!), chicken perlo, adobo "rice", "mac" and cheese...all so delicious! But, the recipe I want to try most is the king cake - even though it is "out of season." Thank you for all of your awesome recipes!
