Cheesy-Cheese Garlic Biscuits

What can I say, like most southern girls, I love biscuits.  Growing up in Georgia, an older lady across the street used to make a fried biscuit out of buttermilk and bacon drippings in a cast iron pan called a Hoe Cake.  It was so good.  If I could eat that again! ;-)


This biscuit recipe is similar to the ones at Red Lobster.  The key is using sharp cheddar cheese, finely shredded.  This biscuit is not for those avoiding dairy. The more dairy I put into the dough, the better they tasted.  And finishing them with a pat of butter at the end only makes them better.
The crunchy bottom crust!


These biscuits are better small so that their is more crust, to make the biscuits nice and crispy. 
The yellow color comes from the eggs I used, not the cheese.
Make extra and eat them for breakfast as your sausage or egg biscuit.  What a treat! 


Cheesy-Cheese Biscuits 
Makes 9 small biscuits


2 tbsp coconut flour
1/4 cup almond flour
1 tsp baking powder
1/4 tsp garlic powder
1/2 serving of Stevia (yes, just a pinch or just omit it)
2 tbsp butter, melted (I used salted)
1/4 cup heavy cream
1 egg
1/4 cup plus 1 tbsp Parmesan Cheese 
1/2 cup Sharp Cheddar Cheese, grated (packed) 

  1. Preheat oven to 350 degrees.
  2. Mix dry ingredients
  3. Then add remaining ingredients and mix with a fork until homogeneous. 
  4. Use small scoop to scoop out dough onto un-greased cookie sheet.  Makes 9 small biscuits
  5. Bake for 12-15 minutes.  They won't turn brown on top but the bottoms will be a nice golden brown. 
  6. Once out of oven, smear a bit of salted butter on top and serve warm. 
Nutrition:

1 Cheesy-Cheese Biscuit: Less than 2 grams of carbs
Red Lobster Garlic Cheese Biscuit: 16 grams of carbs

    1. Donnette, these are delicious!! In one day, I have eaten them with my Roux-less gumbo, eaten them with breakfast and eaten them as the bun for my slider!! I am a happy woman! Hope you like them!

  2. Do you have any tips for those who cannot use almond flour? I want to go grain-free, but my husband is allergic to almonds. I wouldn't be able to use almond flour!! I want to try these.

    1. Mpmom, could you use another nut flour??? I am not a fan of all coconut flour in a biscuit but I am sure you could use pecan flour or make them when he isn't home because they are that good! ;-) Maybe try 1 tbsp extra coconut flour in the place of the almond??? Let me know if you try it with another flour and how it works! Sorry I couldn't be more help!

  5. Hi Melissa,
    I just had a Zuchini Mini-Muffin w/ Cheesecake Frosting (ok, yes, I had dessert first...), & now I'm having these Fabulous! biscuits for the first time, and with a fennel salad I just put together.

    Question: I use a Silpat on a cookie sheet & did so this time with this recipe--do you use one? Also, is there some reason that using a plain un-greased cookie sheet might be better? If so, I'll do it that way next time.

    Thanks for this recipe! I can hardly wait for your cookbook!

  6. Glenda Pearl, so glad you loved the biscuits! I don't have a mat but here lately I have been using Parchment paper. I still get some brown on the bottom (which is what I want), do they brown on bottom using mat? Oh, by the way, I like eating dessert first! ;-) So glad you are excited about cookbook! ;-)

  8. YUM!!!

    I made some in my muffin top pan. And some plain in my mini muffin pan & some with cut hot dogs in my mini muffin pan.

    Now I'm trying to figure out if there is a way to make them a bit thicker so I can cut in half for sandwiches....... :)

  9. I just made these and added some chopped onion--fab! Next time I'm going to add some chopped ham, too--a meal in a biscuit! Just add salad!
