Make this recipe to your own sweetness and chocolate intensity.
You don't have to spend a fortune on popsicle molds. I got these last summer for 50 cents each! I hear they have fancy machines that can freeze pops in under 8 minutes but I will just stick with my green ones for now! By the way, they have a little straw coming out of bottom to drink any melted goodness. Luckily these don't melt easy, they hold up very well, unlike ice-cream or regular popsicles that melt everywhere.
Fudge Pops (Dairy Free)
Makes 4 pops (1/3 cup each)
2.5 oz unsweetened chocolate
2 T coconut oil
½ cup unsweetened almond milk
½ cup coconut milk
1 tbsp vanilla extract
¼-1/2 tsp Almond extract
1/8 tsp Stevia (to taste)
- In a double broiler, melt chocolate and coconut oil on low heat, stirring occasionally until chocolate is melted.
- Remove from heat and add almond milk, coconut milk, extracts and Stevia. Taste for sweetness and intensity of chocolate. If too fudgey for you, add more coconut milk.
- Whisk well and pour into Popsicle molds. Freeze for 3-4 hours or overnight.
- After frozen, run mold under hot water for 5-10 seconds for easy removal.

Random question, but what does the "T" stand for with the coconut oil? I think it's Tablespoons but I'm not sure..

ReplyDeleteAlexie - a capital T is Tablespoon, you're correct. A small t is teaspoon. you may also see Tbs or TBS for tablespoon and tsp for teaspoon.
