OMG Bangin' Shrimp Salad (Grain-Free, Dairy-Free & Low-Carb)

This recipe came from missing Bang-Bang Shrimp at BoneFish Grill and it is SO easy to make!  This may be my new Favorite Recipe!  I thought about frying the shrimp in coconut oil using my Bread-less bread Crumbs but I don't think there is a need.  The sauce sticks to the shrimp quite well.  Be sure to add the chopped green onions at the end.  They are not just for decoration but add a nice flavor to the shrimp.

This sauce would be good on about anything.  Next time I will use chicken tenderloins instead!  Enjoy!

OMG Bangin' Shrimp Salad
Recipe adapted from the Sweet & Spicy Asian Glaze recipe in Satisfying Eats Cookbook
Serves 6; 4 Net Carbs per serving

For Sauce:
3/4 cup water
2 tbsp Sriracha hot sauce (more or less depending on desired heat)
1/4  tsp red pepper flakes
1/4  cup rice wine vinegar
1 tbsp coconut aminos (soy sauce substitute)
2 tsp raw honey (or additional KAL® Pure Stevia)
Up to 1/8th tsp KAL® Pure Stevia (to taste)
1/2 tsp crushed garlic
1/4 tsp ground ginger

1 tbsp arrowroot powder
5 tbsp homemade mayo (olive oil base)

Add all ingredients (only half of Stevia) except for arrowroot powder and mayo to small pot. Mix well and bring to low boil.   Slowly whisk in arrowroot powder.  Taste for sweetness & heat.  Add remaining Stevia if desired. Cook on low for 5-10 minutes or until reduced by half and thick.  Turn off heat and whisk in mayo.  Set aside.

For Shrimp:
1 & 1/2 lbs peeled, washed and de-veined shrimp
3 tbsp fresh lemon juice
1/4 tsp sea salt (to taste)

Romaine Lettuce
Chopped Green Onions

In large pan over medium heat, add shrimp and lemon juice.  Sprinkle with salt.  Stir and cook until shrimp are done or pink.  This should only take a few minutes.  Drain shrimp. Add drained shrimp to sauce and stir.  Taste for saltiness, sweetness and spiciness and adjust if needed.

Serve warm over a bed of lettuce topped with thinly sliced green onion tops or refrigerate for a cold salad.
